Switching Languages for Mac OSX
Select Apple menu, System Preferences. In System Preferences, select the flag, also known as “International”. From here you can scan the list of languages and select the one you need and drag it to the top and log out and in again. If you don’t speak the language you are using, it’s helpful to remember that Shift+Command+Q is log out.
If the language you need to test in isn’t present, click the Edit List button on the right to add additional languages.

So, here's all the languages I have. Please note the lack of the Middle East. I don't test in those languages yet, so you'll have to complete the list for me. Anyhow, I hope this is of some help to you if you need to know how which language represents the English equivalent of what is listed in the Mac System Preferences.
